Default Pork shoulders (picnics)

Anyone seeing any good prices on these yet? They usually come out around the time hunting season is over. I could use some for my sausage.

Default Costco?

Earlier today saw they had boneless shoulders for $5 off, typically around $25 each prior to discount. Price per kg was like $6.99 (so roughly $3.25 per lbs).

Being boneless really helps speed up the sausage making.

Save on in Edmonton flyer shows they are on till tomorrow at $1.79/lb. Or COOP at $1.88/lb.

Costco has ground pork on this week for 2.12lb. 3kg chub.

Bought 4 lower shoulders at CO-OP $1.88/lb. in Lloyd today deboned works out to $2.50 LB.

Haven’t see; them lately but over the years bought from no frills at $1/lb
Usually get a 100/lbs, by the time it’s skinned and boned out maybe 75lbs.
Little bit of work.

Be careful at no frills/wholesale… their shoulders are often pumped full of water.

If they’re on a styrofoam tray they won’t be pumped.
The ones in those thick plastic sealed bags are pumped, you can see the water in the bag. Buying from an old time butcher or Chinese butcher will be the best way I guess.

The added water isn’t the end of the world if you’re grinding it but there’s no telling how much there is and it’s a good idea to adjust the amount of water in the sausage recipe. For me it’s just a matter of it pizzing me off that I have to pay for the added water.

What's the price on case lot Butt's (formerly Picnics) now at Costco? Used to be about the cheapest place to buy trim.

Leduc No Frills has them for $1.39/lb. Best price I've seen in a long time. They had a large pile of them this afternoon.

They have to tell you on the label. "Seasoned" used to be the term used here. If in doubt, ask the meat manager.

The Costco deal on ground pork mentioned elsewhere in this thread is the best deal. I bought three tubes last week for a batch of venison sausage being made over the holidays.

1. I don't consider the skin waste... "free" puffed pork rinds for me.
B. They seem to net out to 75%-80% meat, at $1.39/lb my ground pork is well under $2/lb
3. Costco never seems to have the ground pork on sale when I'm actually in the store.

If I had the freezer space I would have put 10 of the $1.39/lb picnics in the freezer, only had room for 2.

I thought is resurrect this and tell my story from today.

Went to T&T supermarket and got 2 boneless butts $100! Whew! Expensive!
Then I went to wholesale club 2 bone in butts $50.00 …cheaper!

I got home and compared them in the sunlight, T&T nice and pink and fresh looking. Wholesale, greyish and not so good looking.

I made 4 capicolla to hang in the basement and the rest I made some souvlaki for the freezer and some Italian fresh frying sausage.

Damnit but I should have known the wholesale club ones were pumped full of water but a guy sometimes doesn’t think things through eh?
I normally add 15% water to fresh sausage, this time it was way too much water. Good thing there was 50% of the T&T pork in there or it would have been much worse. Sausage isn’t binding well, there’s too much water and whatever it is they put in the water.

So lesson “relearned,” that wholesale club stuff is poopoo
