Default Fishing in Mexico

Hey me and my wife are thinking of going to Mexico in february or march and we are thinking of where exactly to go. I'm not to much for sitting there by the pool and I would like go out and do stuff, for myself if I am going to leave the beautiful cold of winter and ice fishing the 1 requirement I have is I want to go out fishing on a charter for a day. I don't need to catch a marlin or something like that (hundreds of pounds) at this point, I would like to be able to catch a few fish and perhaps something with a little size (hopefully something 30+ pounds) as I would like to catch a personal best. So my overall question is where to go, what to fish for, and with whom?

we went to huatulco last year and the fishing was excellent. just went down to marina and asked around for a charter. huatulco is small and surrounded by national park. so there is lots of outdoor activities.
