I wish I could post a pic as this turned out beautifully.

Pronghorn, outside round that sat in dry-rub Cajun, a pinch of brown sugar, and lemon, for three days in the fridge, then lightly grilled on the barbecue. Served with grilled asparagus and baby potatoes with onion, stewed in a Tikka Masala style sauce.

And, I looked after my Pronghorn as he was cut and wrapped within hours of putting him down. No Manyberries Marinade (ie. three days in the back of a truck, dust, flies, and heat). This buck is very tasty.

Pork chops stuffed with blue cheese, bacon, apple and pecans. Mrs. ARG doesn't like blue cheese so I made hers with cream cheese. She thought that the pecans were 'gilding the lilies' .

Last night as people rolled in from various places to spend Christmas at my daughters in stony plain we cheated a little and ordered pizza and wings

Tonight is different, our Christmas eve supper for years has been a bone in ham glazed with a mustard and brown sugar mix and it's ready to pop it in the over, the crockpot full of scalloped potatoes with a mushroom, cheeze and sour cream sause has been going on low for a couple hours already, we'll make a salad and some veggies and the crew of 14 will chow down about 6:00

Cheated tonight, spent the afternoon out for a drive in the country with some friends, grabbed a Red Swan pizza and some wings on the way home to watch the brier final haven't had pizza in a month it was a nice change.

They were actually fine, not mediocre. the debacle was that it was one piece that was too thick for a single steak to “properly” cook this way, but not quite thick enough to slice it into two steaks. After some back and forth, I decided on the latter and after a bit of paranoia (about getting it to the shoe sole stage, a la well done) while cooking, crisis was averted and it turned out all right. I’d prefer a little more rare myself, but it was for the kids (they’d probably eat the shoe soles too though, if I cut them properly, lol).

Funny because this was posted a year plus a day ago today. It’s got to be a calling or something, lol. Chicken is marinated and in the fridge, ready for a fire tomorrow.

Just realized that that ^ was supposed to continue, lol. Couldn’t find the skewers for the life of me on Sunday. We moved, some things are packed in storage because there is a bigger move coming in the summer, but I was sure I knew where those were. Well, they weren’t, lol. Even dug up some boxes in storage to no avail. Had a revelation in the evening and found the damn sticks! So it was a go on Monday.

This is the worst part of the whole process, especially when doing it alone (which is normally the case for me):



To be fair, sometimes, there is help offered, but I am pretty meticulous about the process, so I laugh it off (probably hurt feelings and whatnot); hence, the process I go through alone. Laughing here. The small bowl there is just for disposal of the marinade stuff, if anyone is wondering. Well, that’s done -> on to the next step:



Man, that smell… Sure missed it over the winter.

I am no exquisite chef, and while other’s plates were presented better, I just dumped some chicken, fries (store bought frozen, womp womp), and kale into mine and that was good enough:



In the bowl there are also cherry tomatoes, cut in half, salted and peppered. In the tupperware are the onions, sliced, marinated in white vinegar, freshly ground pepper (no idea what the mix of peppercorns is) and some cayenne pepper for heat. It was a good dinner!

Finally got around to my supplemental deer hearts, trying to keep the hunt alive! Took some effort to clean them up into nice size steaks, trimmed off all the waxy fat and cartilage, cooked on cast iron in butter and steak spice, amazing flavour, texture, very tender, served with a little chipotle hot sauce.

Default Sauerkraut and Sausage

Homemade sauerkraut and Mennonite sausage with boiled potatoes, browned the sausage in the frying pan for a couple minutes then cut into pieces and into the crock pot, dumped a quart of homemade sauerkraut over it just left it on low for about 3 hrs. Gas city tonight but it was dam fine.
