Smoked Cheese
Thinking on what to do on a cool rainy day? Smoke some cheese! We love our cheese! Just getting started!

I've smoked lots of different things in my life but never cheese. Is it hard to keep lit?

You have to do it on a cool day! On a Bar-b-Q again when it is cool! takes about 3 hours!

Have you ever smoked cream cheese? Only takes about 2 hours and is mighty fine! Rub down blocks with a little black pepper. Place the blocks on a bit of tin foil in case you get a bit hot and get to smoking at a low low temp. Fantastic on Ritz or Triscuits.

Do you have to age the cream cheese after smoking like you do normal cheese?

I gotta try this.
This is a helluva derail, but if you like cream cheese, Philly has a smoked salmon one that is really lovely. Hard not to devour it. It’s super good on a bagel with sliced red onion and capers. Yep. Quite lovely.
Edit: I thought this was the society going down the shtter thread, so I apologized for the cream cheese derail. Now I realize it was unnecessary. So, if you read my apology, screw you. I take it back. LOL

No you can eat it right away. I sprinkle mine lightly with a BBQ rub and smoke it in my smoker with a smoke tube only . No need to heat the smoker and it's delicious.
