Default What type of wood smoke

If Alder is too mild for your Sausage try a Blend of Hickory, Apple and Cherry as posted above. I use Alder for fish, I find it compliments it well. JMO.

I use willow or Saskatoon or Chokcherry.

I've been told that most hardwoods will work, but many need to have the bark removed.
That's why I like willow and wild fruit woods. No need to remove the bark.
